Our meals are based on plant nutrients and plant-proteins, with ocasional use of eggs or cheese. 100% Vegetarian.
No meat!

We would like to use organic ingredients all of the time, but sometimes they are simply not available! We substitute only when we really have to.

In addition we pack everything in earth-friendly compostable containers.

Amaranth

*What’s At the End of That Fork?

Amaranth describes a group of more than 60 different species of grains that have been cultivated forabout 8,000 years. Grains that were once considered a staple food in the Inca, Maya and Aztec civilizations. Amaranth, a tiny seed like sesame or poppy, is classified as a pseudocereal, not technically a cereal grain like wheat or oats, but sharing a comparable set of nutrients. Its earthy, nutty flavor works
well in many dishes and it is gluten-free and rich in protein, fiber, micronutrients and antioxidants, supplying g iron, selenium, magnesium, and 100% of your RDI for manganese, a micronutrient critical for brain heath.

Broccoli Plus Salad with Plant-Based Green Goddess Dressing

Steamed broccoli and carrots with roasted sweet baby bell peppers, raw cherry tomatoes, raw baby spinach leaves. Dressing: garlic, vegan mayonnaise, yogurt, marjoram, Herbes de Provence, fresh ground pink and black pepper, celery seed, cauliflower curd, chives.

Sesame Ginger Vegetable Tofu Stir Fry

Firm tofu, fresh ginger, garlic, sesame oil, red pepper flakes, rice wine vinegar, Braggs liquid aminos, honey, salt, hempseed, baby bell peppers, cauliflower, string beans, mushrooms, yellow summer squash, lemon zest, chives and parsley. Served on mixed steamed grains: orzo, couscous, brown rice.

Bonus: Amaranth* Ritz Crackers

Organic flour, amaranth seeds, sesame seeds. powdered cumin, baking powder, salt, olive oil. Try with hummus, a flavored butter or nut butter on top or with soup. Or salad (see above).

Olive oil, garlic, fresh ginger, white miso, amino acids, brown rice vinegar, sesame oil, scallions, red pepper flakes, baby spinach, fresh mushrooms and dried chipotle, white wine, 1 beaten egg.

Cauliflower “Meatballs” with Pesto-Walnut-Mushroom Sauce (Baked not fried)

Fresh cauliflower, Brown rice, bread crumbs, grated carrots, garlic, oregano, paprika, savory seasoning, fresh grated salt, basil, parmesan cheese, pepper.
Sauce: Toasted walnuts, pureed fresh cilantro, pesto, olive oil, sautéed mushrooms.
On escarole with cucumber and carrots and pea sprouts
Side Bonus
Ginger-garlic-scallion (etc) Dipping Sauce (see jar notes): Tasty on both raw and cooked plant foods.

WHY HORSERADISH? Famous for medicinal uses for centuries, Horseradish is a lesser known cruciferous vegetable (same family as kale, radishes and broccoli) which supplies compounds called glucosinolates which the National Institutes of Health tell us, help fight cancer and other inflammatory conditions… Horseradish possesses powerful antimicrobial and antibacterial properties. As an expectorant, It stimulates mucus secretions in the sinuses and the lungs, helping to treat bronchitis, cough, the common cold, and sinusitis. Compared to conventional antibiotics, horseradish does an equally in good job of clearing up sinusitis and bronchitis as prescribed antibiotics says the American Botanical Council.
